Putting Food By: Cranberries

Hi everyone! Around here, we only see fresh cranberries available between Thanksgiving and Christmas. I love cranberries in juice and dehydrated, but store-bought cranberry sauce just doesn't cut it for me. So, I tried canning my own, and found a delightfully yummy product. If you can still find fresh cranberries in the store, you might want to can some for yourself, too! (Recipes from the Ball Blue Book.)

Jellied Cranberry Sauce

4 1/2 cups cranberries
1 3/4 cups water
2 cups sugar

Wash cranberries; drain. Combine cranberries and water in a large saucepot. Boil until skins burst. Puree using a food processor or food mill. Add sugar to cranberry pulp and juice. Boil mixture almost to gelling point (pulp falling from the spoon in a sheet). Ladle hot sauce into hot jars, leaving 1/4-inch headspace. Adjust two-piece caps, using lids set in previously boiled water. Process 15 minutes in a boiling-water canner. This will make approximately 2 pints. (I canned mine in smaller containers for quick snacks.)


Whole Berry Cranberry Sauce

8 cups cranberries
4 cups sugar
4 cups water

Wash cranberries; drain. Combine sugar and water in a large saucepot. Boil 5 minutes. Add cranberries. Continue boiling, without stirring, until skins burst. Ladle hot sauce into hot jars, leaving 1/4-inch headspace. Adjust two-piece caps, using lids placed in previously boiled water. Process 15 minutes in a boiling-water canner.

These recipes sound yummy and healthier than the store bought version. Not sure if whole cranberries are still out though. May have to do this next fall/winter. Hope you are doing well and keeping warm. Sure has been a cold one here.

Shelly, this is such a yummy sauce. I like the first version, not the whole berry. I was able to find some berries last week that were still good. Had some extra to freeze, too. (Good for muffins and a desert I make.)

We're doing good here. It has been very cold here, as well, except for the week after Christmas where it warmed to 50 for 2 days and melted all of the snow (except the big piles). Now we just have a dusting. Seed catalogs are coming, though, so my thoughts are turned to better things!! :) Take care, Shelly!
